This is easily one of my favorite recipes – and it’s easy, too! Ingredients: 2 pounds ground beef 1 can cream of mushroom soup 1 can cream of chicken soup 1 small can of peas, or similar volume of frozen peas (1 cup?) 1 medium onion, chopped 1 tablespoon minced garlic (or 1-2 cloves) 1/2… more
Recipe: Corned Beef, Slowcooker Style

I’ve had a beef in my fridge since February, but I entirely forgot to cook it on St. Patrick’s Day! Finally, I’ve decided to do so this week, and thought I’d post my recipe while I was at it! Using the crockpot is my favorite way to cook corned beef – because it’s super easy!… more

I bought some chicken last night – thin cut breasts at (gasp!) evil Walmart, and needed something to do with them. I was all set to make chicken Parmesan, but I lacked a crucial ingredient – mozzarella. So I fretted and muttered to myself, and finally dug up this recipe from Food.com. One of my favorite meals ever is Japanese Tonkatsu. Straight from Japan. (Photo not mine.) Well, almost. That’s where I fell in love with it, anyway. I spent almost 6 weeks in Japan back in 2003 or so, and it was 6 of the most wonderful weeks of my life. Then I came back, and… more
Amazing Slow Cooker Pot Roast
| June 28, 2010 | Posted by Kate under cooking, main dishes, recipes |
My favorite (and easiest!) pot roast. I don’t know how well it qualifies, since it doesn’t have the usual carrots and potatoes and such, but it’s an excellent roast, easy to make, and is fantastic served over egg noodles. This recipe initially called for 2 cans of cream of mushroom soup, but I much prefer… more
Delicious Ham (or Sausage, or Bacon) & Potato Soup
| June 21, 2010 | Posted by Kate under cooking, hearthcraft, recipes |
Yet another soup recipe… This time, my second favorite soup ever – potato soup! This soup is infinitely adaptable and forgivable. I rarely measure most of the ingredients anymore. This is easy! Ingredients: 3.5 C diced potatoes (any sort of potatoes will do here – I like yukons or reds, but I’ve used plain old… more
Mom’s BBQ (not really) Ribs
| June 13, 2010 | Posted by Kate under cooking, hearthcraft, recipes |
I’ve been craving me some bbq ribs. So tonight, I dug out mom’s recipe and whipped up a batch. These are some of the best danged ribs ever – if you like sweet bbq sauce, that is. If you’re looking for a more vinegary or spicy sauce, you’re barking up the wrong recipe. Ingredients: 2.5… more
Taco Soup
| May 3, 2010 | Posted by Kate under cooking, recipes |
This is my favorite taco soup recipe ever. Try it, it won’t disappoint! Ingredients: 2 cans pinto beans (or, do like I do, and use one can pinto, one can kidney for variety) 1 can tomatoes w/green chiles 1 can stewed tomatoes (or similarly seasoned diced tomatoes) 1-2 pounds ground beef) 1 packet taco seasoning… more
